很多年前就看上这种蒸蛋糕了,可是一直都懒着动手,拖到今天,终于把这个任务给完成了,oh yeah!蛋糕非常好吃,没让我失望~~!呵呵。。。

柠檬开心果蒸蛋糕
Lemon curd and pistachio steamed sponge puddings
8 tbsp Finest Lemon Curd
100g shelled pistachio nuts
150g unsalted butter, softened
100g golden caster sugar
Finely grated zest and juice of 1 unwaxed lemon
2 medium eggs
150g self-raising flour
1. Grease 8 ramekins (diameter 7cm). Spoon 1tbsp lemon curd into the base of each. Reserve 16 pistachios for garnish, then pulse the rest in a food processor until they’re roughly chopped.
2. To make the sponge, beat the butter, sugar and lemon zest in a bowl with an electric whisk until light and fluffy. Beat in the eggs, one at a time, until well mixed. Sift in the flour, then add the pistachios and lemon juice. Mix until well combined.
3. Spoon the sponge mixture over the lemon curd. Cover each ramekin with greaseproof paper, then with foil, and tie securely with string. Put them in a flat-bottomed steamer over a large a pan of boiling water. Cover with a tight fitting lid and steam for 35-40mins, until the puddings have risen and are firm to the touch. Check regularly and top up with boiling water if necessary.
4. Chop the reserved pistachios. Turn out the puddings, decorate with chopped nuts and serve.
